How to Make Eggplant Pastry Recipe?

  1. Chop the onion and peppers. Peel the eggplants and cut them into cubes. Peel and chop the tomatoes.
  2. Let the chopped eggplants rest in warm salty water for about 10 minutes.
  3. Fry the onion and pepper respectively. Add the tomato paste and continue roasting. 
  4. Add the eggplants, salt and pepper, fry the tomatoes a little, then add their water and cook until the eggplants soften.
  5. Set the cooked stuffing aside to cool. Whisk the sauce ingredients.
  6. Spread the dough, spread the sauce and fold it from the edge to the middle to form a square.
  7. Spread one-third of the eggplant mixture into strips. Roll the dough and slice it. Place it on the baking tray.
  8. Spread the remaining sauce on top. After applying egg yolk, sprinkle sesame seeds and bake in the oven preheated to 180 degrees until golden brown.
