It was my destiny to cook the mastic artichokes from Izmir after 2 weeks. Since my mind is constantly cluttered these days, I hadn't decided how to cook until I started sorting. It was a good opportunity to evaluate the shallots at home and the broad beans waiting in the freezer. After all, it's really delicious.

Ingredients for Gum Artichoke Recipe

  • 6 mastic artichokes
  • 2 cups of broad beans
  • 1 cup shallot onions
  • 1-2 cloves of garlic
  • 1 tea glass of olive oil
  • 1 teaspoon of granulated sugar
  • salt
  • 1 tablespoons of flour
  • 2 water glass of water
  • dill

How to Make Gum Artichokes with Legumes?

  1. Fill a deep bowl with water to drop the artichokes in. Squeeze 1-2 lemons into it and add the lemon peels.
  2. Remove the outermost leaves of the leafy artichokes and shorten the stems. Cut the leaves at the end with the help of a knife and cut the artichokes into 2 parts in the middle.
  3. Take the hairy part above the fleshy part with the help of a spoon and put lemon in it and throw it into the lemon water. Do the same for all the artichokes.
  4. Peel the shallots and put them in the pot. Add olive oil and fry.
  5. Arrange the artichokes on top of the broad beans and onions.
  6. Mix water, flour, granulated sugar and salt in a bowl and pour over the artichokes.
  7. Cook on low heat with the lid closed until the broad beans and artichokes are soft. Add the chopped dill on top of the cooked artichokes and leave to cool with the lid closed.
  8. Serve warm or cold.
