Spaghetti with Arugula Pesto

We came to the end of another week when we said it was a disease, it was like that. This weekend is very important to me, actually it's both my birthday and our wedding anniversary :) The worst part is that my wife and I are still sick. Every year, we used to run away from the city for 1-2 days and celebrate our wedding anniversary, but this year it seems like we will drink linden at home and offer each other the antibiotics given by our doctor :)

I said it's time to make arugula pesto because there is no more basil in the market during the winter months and the prices of small packages are expensive in the markets. When preparing arugula pesto, you can use walnuts or hazelnuts instead of pine nuts according to your taste. You can also try aged cheddar cheese instead of Parmesan.

Ingredients for Spaghetti with Arugula Pesto

How to Make Spaghetti with Arugula Pesto Recipe?

  1. Wash and dry the arugula and cut off the stems. Peel the garlic.
  2. Put the pine nuts in a small pan and roast them on medium heat until they change color a little.
  3. Start the blender by adding the olive oil, then the garlic, arugula leaves, pine nuts, grated Parmesan cheese and seasonings (salt and pepper).
  4. When all the ingredients are thoroughly shredded and mixed, transfer them from the blender to the bowl.
  5. Boil the pasta in plenty of water and drain. Add some of the sauce you have prepared according to your taste. Add the rocket leaves and mix until the pasta turns into a sauce.
  6. Take the pasta on plates, sprinkle some peanuts and parmesan on it and serve.
