Bulgur Rice with Zucchini

Hello Dear Friends,

I love bulgur pilaf. Usually, I make extra additions to feed my daughter extra vegetables and legumes :) This is sometimes in mushrooms, mixed side dishes or legumes such as green lentils and chickpeas. Zucchini definitely goes well with bulgur pilaf. If you haven't tried it yet, I highly recommend you try it.

I use either grated tomato or tomato sauce that I prepared myself in this rice. Recipe for my tomato sauce You can find it here. You don't have to deal with the jar, you just need to portion it and throw it in the freezer when it gets cold.

How to Make Zucchini Bulgur Pilaf Recipe?

  1. Chop the onion and garlic finely. Chop the zucchini into small cubes.
  2. Take the onion and garlic in the pan, add the oil and fry them. When the onions start to become transparent, add the tomato paste and fry.
  3. Add the zucchini, fry it and add the bulgur.
  4. Add tomato sauce, water, salt and pepper and mix.
  5. Cook on medium heat until the rice absorbs its water.
  6. Turn off the stove, take the rice that has absorbed its water from the stove, let it rest for 10 minutes and serve.
