Winter Tomato Sauce with Capia Pepper

I wanted to share this practical recipe with you before the winter tomato sauce was over. Everyone has a tomato and pepper ratio in their minds according to their taste. For the last two years, I have put it in the form of 5 kilos and 1 kilo and I am very satisfied with its taste.
Actually, I was going to make 20 kilos of tomatoes and 4 kilos of pepper, I even bought the materials, but when I said it was time, it was a jar, it was patience, I closed the first round with 10 kilos of tomatoes + 2 kilos of capia pepper. I made menemen with onions from the remaining portion and cooled it and threw it in the freezer. There are 15-17 jars of various sizes. Since the peppers increase their density when passed through the blender, there is no need to separate the water or boil it too much.
Since last year I pasteurize it by strumming for 20 minutes in a deep pot instead of turning it upside down on the lids. This is the best way to avoid problems you may encounter due to mold and bacteria growth.

Ingredients for the Winter Tomato Sauce with Capia Pepper Recipe
- 10 kilos of pear tomatoes
- 2 kilos of capsicum
- 2-3 tablespoons of salt
How to Make Winter Tomato Sauce with Capia Pepper Recipe?
- Remove the stems of the peppers, pour out the seeds and chop coarsely.
- Chop the tomatoes coarsely.
- Put the tomatoes and peppers in a saucepan and cook over medium heat, stirring occasionally, until they reach the desired consistency.
- Add the salt and pass it through the blender. Boil for another 10 minutes to get the consistency well.
- Divide the tomatoes into clean jars as soon as you turn off the stove. Cover the jars with unused lids that you boil and dry.
- Boil the jars for 1-2 minutes in boiling water that is 15-20 inches in length and carefully take them to the place where you will leave them to cool.
- Store the cooled and vacuumed tomato sauces in a cool place out of the sun.
