Stuffed Cucumbers

Hello Dear Friends,

We woke up to a sunny Istanbul morning, but the weather is still a little cold. Although I stubbornly try not to get sick, I have a minor sore throat.

I wanted to start this week with a light recipe. The simplest example of protein+vegetable mixes that I made a habit of during the diet is stuffed cucumbers.

I think it is the best appetizer to prepare something pleasing to your eyes when you get bored of standard presentations and start to repeat what you eat, so you don't even want to snack.

Unfortunately, today I have to cut short and get back to piles of work. In the meantime, let me know how your diet is going.

Note: This recipe is for 1-2 people, you can multiply as much as you want.

Ingredients for Stuffed Cucumber Recipe

How to Make Stuffed Cucumbers Recipe?

  1. Peel the cucumbers, cut the ends as if they will fit on a plate and divide into 3 equal parts.
  2. Use a pumpkin carving or watermelon spoon to dice the cucumbers without piercing the bottom.
  3. In a small bowl, mash together the cheese and parsley with a fork. Pour the mixture into the cucumbers with a suitable spoon.
  4. Take the cucumbers on a serving plate, sprinkle black cumin on top, drizzle with olive oil and serve.
