Good morning everybody :)

This morning I got up early, went out to the garden of my mother's house and picked plums from its branch. I played with some cats. I took in the air like Miss and had a nice breakfast with my buns that were waiting. Actually, I prepared the pastries at around 23:00 on a Thursday night, saying that it would look like a moment of insanity :)
They still look fresh even though it's been almost 2 days since I cooked them. It's enough to heat it up a little… It doesn't bother you since the amount of oil in it is low.

When kneading the dough, you need to be careful that it is neither too soft nor hard. If it is too soft, it will not be collected, if it is too hard, it will not ferment properly.

Since the weather is hot, it ferments quite quickly, but if your house is cool, you can leave these pastries to ferment in the oven, as in other pastries.

Ingredients for Soda Pastry Recipe

  • 1 pieces of eggs
  • 1 tea glass of milk
  • 1 tea glass of olive oil
  • 1 teaspoon of soda
  • 1 cube of fresh yeast (42 g)
  • 1 dessert spoon of salt
  • 1 teaspoon of granulated sugar
  • 4,5-5 glasses of flour

  • 1 pieces of eggs
  • 2 tablespoon of olive oil
  • sesame and black cumin

How to Make Soda Pastry Recipe?

  1. Crush the fresh yeast in the milk to which you have added sugar with your hands. (I take it out of the freezer and put it in the microwave in a bowl, since it melts, I can add it directly to the bowl)
  2. Take 3 cups of flour into the mixing bowl. Make a hole in the middle and add the yeast, olive oil, eggs, salt and sugar that you have melted with milk and knead.
  3. Add flour and continue kneading until the ear forms a soft dough. 1,5 cups is more than enough.
  4. Get rid of the container and cover the collected dough with a cloth and let it rest for 1 minutes.
  5. Tear off small pieces of tangerine from the rested dough. Roll it with your hands, press it open and close it with olives or cheese, if desired.
  6. Arrange on baking trays at 2 cm intervals. Spread the olive oil mixture with the eggs you prepared on it, sprinkle sesame seeds and black cumin seeds and leave to ferment on the tray for 10 more minutes.
  7. Bake in a preheated oven at 180 degrees for about 20 minutes until the buns are browned.

    I made this pastry for breakfast yesterday morning. but I think my dough was not fermented, my pastries were not so fluffy. Does the dough need to rise a lot when we wait? How many degrees does the oven need to be for fermentation in the oven?

    Greetings Nilay hn. Do you know that fresh yeast cannot be frozen, if you freeze it, it will be carcinogenic? I learned it from my food engineer friend, and if you are one of those who pull leftover breads in a robot and store them in the freezer, unfortunately, bad news, because it is also carcinogenic :(

    I tried your pastry recipe. I just used a teaspoon of dry yeast instead of fresh yeast. It was really good. My daughters like it very much. I don't remember how many times I did it. Thanks for the recipe.
