Flour is mostly used in pudding recipes, but flour does not always give the desired result. Some complain about the smell of flour in the dessert. In order to prevent this, the color of the pudding may not be as white as desired when the flour is roasted. That's why I use rice flour and very little starch.
When it comes to mastic gums, you can use up to half a teaspoon by crushing them beforehand, as they are usually in large and small pieces.

Ingredients for Gummy Custard Recipe
- 1 liter milk
- 1 spoonful butter
- 1 coffee cup of rice flour
- 1 tablespoons of starch
- 1 cups granulated sugar
- 2-3 pieces of mastic gum
- 1 packet of vanillin with sugar
Fabrication :
- Separate 1 glass of milk and add starch and rice flour into it and whisk until there are no lumps.
- Put the remaining milk and sugar in a saucepan and stir over low heat until the sugar dissolves.
- Add the reserved rice flour milk, vanillin and crushed mastic gum to the pot and boil it by mixing it until it gets the consistency of pudding.
- Add the butter to the pudding pudding and mix it with the mixer for 2-3 minutes and divide it into the glasses. Serve garnished.
