Eggs with Minced Potatoes

This evening, I actually had in mind to share another recipe, but due to sahur, I decided to share an egg with mince and potatoes. As someone who likes scrambled eggs and eggs with potatoes separately, I think the combination of the two is perfect.
Another good thing about this recipe is that you can use ground beef that you roasted beforehand. Sometimes, instead of cutting the ground meat into pieces and freezing it, I first roast it. I cut the roasted ground beef into 2-3 parts and put it in the freezer.
Thus, it makes my job much easier when I don't have time. You can also add extra grated cheddar cheese to this recipe.

Ingredients for Minced Potatoes Egg Recipe
- 2 medium potatoes
- 5 pieces of eggs
- 2 tablespoons of vegetable oil (for frying the minced onion)
- oil (for frying potatoes)
For the mince:
- 150 gr mince
- 1 medium onion
- 1 cloves of garlic
- salt
- black pepper
- cumin upon request
How to Make an Egg Recipe with Minced Potatoes?
- Peel the potatoes, cut them into cubes slightly larger than the backgammon dice and drain through water.
- Heat the oil in a frying pan, fry the drained potatoes in deep oil until they turn brown and leave them on a paper towel.
- Chop the onion for cooking and sauté for 1 minute with vegetable oil. Add the minced meat and continue sautéing.
- When the ground beef begins to release its juice, add 1 clove of garlic, salt and spices that you chopped and continue sautéing.
- Add the potatoes to the minced meat and fry for 2 more minutes.
- With a wooden spoon, make 5 dents to break the egg on the minced potato mortar.
- Crack the eggs and cook them until they reach the desired consistency. Serve with salt and pepper if desired.
I added 4 cloves of garlic. It was delicious with cumin, black pepper and red pepper. I used butter instead of oil.
