Parfait

For Syrup

How to Make Parfait Recipe?

  1. Boil the water and sugar until it reaches the consistency of syrup, take it off the stove and remove it from the stove.
  2. In a bain-marie, start whisking the egg yolks with a whisk. Stream the syrup you prepared and whisk it until it swells and turns pale. When it gets a thick consistency, add the valina extract, take it out of the bain-marie and leave it to cool in the refrigerator.
  3. Beat the cream at high speed of the mixer and fluff well. Stir into the egg mixture, which you have cooled one third of the way through, being careful not to deflate it from the bottom up.
  4. Add the rest little by little and mix it in the same way with the help of a spatula.
  5. Wet your silicone molds with water and drain the excess water.
  6. Pour parfait mixture into half of the cups, divide the cherries into the cups and pour the remaining mixture. Finally, add the biscuits as in the photo.
  7. Chill in the freezer for 3-4 hours and serve with garnish.
