Ingredients for Baked Potato Meatballs Recipe
- 3 medium potatoes
- 3 medium tomatoes
- 2 green peppers
- 1 tablespoon tomato paste

- 1 cloves of garlic

How to Make Baked Potato Meatballs Recipe?
- For the meatballs, put the minced meat in a large bowl, crumble the bread crumb (I grate the most toasted bread), add the grated onion, crushed garlic and spices with the small side of the grater and knead. Form small balls and arrange on a large plate. Cover it with cling film and take it to the closet to rest (it was about 16 meatballs the size I made).
- Peel the potatoes and slice them as in the photo. Gently drizzle oil on the tray you will cook and arrange the potatoes on the tray. Slice the tomatoes as many as the number of potatoes and arrange them on top of it, and do the same for the peppers.
- Take out the meatballs you have rested in the fridge, place one on each of the vegetables you have prepared and fix them with the help of toothpicks.
- In a small bowl, whisk the tomato paste, water and oil to make the sauce (I add thyme and a little more spice into it. Pour the sauce you have prepared over the meatballs.
- Cover the tray with aluminum foil and bake in the oven at 250 degrees until the potatoes are soft. Serve with pilaf.
