Ingredients for Infused Pasta with Tomatoes

  • 5-6 medium tomatoes

How To Make Infused Pasta With Tomatoes?

  1. Peel and dice the tomatoes. Finely chop the green chillies if using.
  2. Put the oil, tomato, pepper and salt in the pan where you will cook the pasta and fry until the tomatoes are slightly melted. Add the tomato paste to the tomatoes and fry for 1 more minute.
  3. Add the pasta to the tomato sauce and cook, stirring, for 2-3 minutes.
  4. Add enough hot water to cover the pasta by 1 finger and close the lid of the pot.
  5. Cook over low heat, stirring occasionally, until the pasta water is absorbed.
  6. Serve the pasta with the drained tomato, plain or with grated cheddar cheese.
