I love that sour, sour taste of purslane, when I went shopping recently, I saw that the fresh purslane were starting to take their place in the aisles, and I couldn't resist and bought 1 bunch.
Believe me, it was great.

Ingredients for Purslane Recipe with Olive Oil

  • 1 bunch of purslane
  • 1 medium onion
  • 3 tablespoons of crushed tomatoes
  • 1 tea glass of olive oil
  • 1-1,5 tea glasses of water
  • 1 tea spoon salt
  • 1 teaspoons of sugar

How to Make Purslane with Olive Oil Recipe?

  1. Purslane that was washed and cleaned well (I washed 4 waters).
  2. It is cut into chunks. In a medium saucepan, add chopped onions, sugar and salt and fry in olive oil.
  3. Then add tomatoes and cook for 2-3 minutes. more roasted.
    Add the purslane little by little and mix.
  4. 10-15 minutes on low heat. cook it and serve it warm :)

Note: I smash my softened tomatoes in a rondo without spoiling and keep them in a jar in the refrigerator. While cooking, I both save time and become more practical.
