Ingredients for Cretan Squash Recipe with Olive Oil

  • 8-9 squash squash
  • 3 large ripe tomatoes
  • 1 large onion
  • 1 cloves of garlic
  • 1 capia pepper (red pepper with meat)
  • 1-2 green bell peppers
  • 3-4 tablespoons of olive oil
  • salt
  • black pepper
  • dill

How to Make Cretan Squash Recipe with Olive Oil?

  1. Peel the onion and chop the piyaz. Peel the skins off the tomatoes and dice them finely.
  2. Cut the peppers in half, remove the seeds and chop them like onions. Cut the garlic into 2-3 parts.
  3. Wash the tops and bottoms of the girt zucchini. Divide it into 6 or 6 parts depending on the size like an apple slice.
  4.  Put the onion and peppers in the pot with the olive oil. Fry on medium heat until soft.
  5. Add the zucchini and fry for 1 minute. Add tomatoes, garlic, salt and pepper and mix.
  6. Cover the zucchini in the pot, cook on low heat, checking from time to time, until the zucchini softens.
  7. Finely chop the dill, sprinkle it over the cooked skewers and let it rest with the lid closed until the food comes to room temperature and serve.
