The first day of Ramadan is already behind :) This month, I will try to share as many practical and nutritious recipes as I can. Apart from the menus I share day by day, I will include recipes that you can easily prepare for iftar or sahur.

Bulgur salad is one of these recipes… You can prepare it as a satisfying and nutritious alternative to the dishes you will prepare.

Of course, you can also prepare this recipe at home with only a few leftover ingredients. If you use olive slices of olives, the salt will be lower.

Ingredients for Bulgur Salad with Olives

  • 1 glass of fine bulgur
  • A little more than 1,5 cups of boiling water (bulgur will pass by 1 finger)
  • 4-5 tablespoons of boiled corn kernels
  • 10 pitted green olives
  • 3-4 tablespoons of pitted black olives
  • 7-8 candied tomatoes
  • 1 red capia pepper
  • quarter bunch of parsley
  • quarter bunch of fresh mint
  • salt
  • olive oil
  • pomegranate
  • lemon juice
  • optional red pepper flakes

How to Make Bulgur Salad with Olives?

  1. Take the fine bulgur into a deep glass bowl. Add enough water to cover it by 1 finger and cover the mouth of the bowl with cling film and let the bulgur rest to swell.
  2. Wash the mint and parsley, separate the leaves from the stems and chop finely. Cut the tomatoes into 4 parts.
  3. Slice green olives and chili peppers.
  4. Add all the ingredients to the swollen bulgur and mix.
  5. Serve by adding olive oil, salt, pomegranate syrup and lemon juice according to your taste.
