Zahter Salad (Fresh)

I shared an article about zahter the other day. I made half of the bunch I bought as fresh salad and the other half dried to use in meals. Here you can find my article about breakfast zahter and dried zahter.
When zahter is fresh, it becomes a salad that I love to use with meat dishes. To remove the bitterness, it is enough to wash it after rubbing with some salt. If you say you can't eat too spicy, you can rub the leaves until they get soft, but I don't like the way it looks.
We generally use the thin leaves and sprout part of the fresh zahter, not the stems. Thus, it is not hard and the taste is softer. Those who want to use it in its winter green form can store it in a jar after removing the stems, putting enough olive oil to cover it completely. Since this olive oil takes the flavor of zahter, it has a very pleasant aroma.
You can also add spring onions, parsley and fresh mint to your zahter salad.

Ingredients for Zahter Salad (Fresh) Recipe
- Half a bunch of fresh zahter
- 1 medium tomatoes
- 2-3 stalks of fresh onion upon request
- 5-6 green olives
- pomegranate
- olive oil
- salt
How to Make Zahter Salad (Fresh) Recipe?
- Extract and wash the leaves of the zahter. Wait a while for it to drain.
- Sprinkle some salt on it and rub it lightly (I rub less because I like its intense taste and fresh look. You can rub it more to get the bitterness off if you want.)
- Leave the rubbed zahter in for 5 minutes, wash and drain. Spread on paper towel to absorb moisture.
- Core and slice the green olives. Chop the tomato into cubes.
- Mix zahter, tomatoes, green olives, olive oil, salt, pomegranate syrup and, if you are going to use it, fresh onion in a large bowl.
- Serve your salad on a serving plate.
