What is zahter?
Zahter, Zater, Çıprika… This is a herb with a thyme-scented and spicy flavor, which has many different names from the rich culture of our country.
Delicious salads are prepared from its fresh leaves, especially next to the grills. It can also be added to meatballs and soups. It can be dried and used just like thyme. It is quite different with zahter for breakfast. Breakfast zahter is prepared by grinding and mixing many ingredients. You can see the difference in the photo.

What is Breakfast Zahter?
The essence of breakfast zahter is generally Roasted Chickpeas or Chickpeas, except for dried zahter. Roasted Menengiç – Roasted Watermelon Seeds – Roasted Melon Seeds
Boiled Roasted Wheat – Thyme – Mayana (Fennel) – Küzbara (Coriander) – Cumin – Sumac – Sesame – Pepper – Salt enters and is eaten by me with olive oil. If you want, you can dry the fresh zahter, roast it with seeds and roasted chickpeas, add other spices and prepare it in a food processor.
You can mix it with olive oil and put it on the table, or you can sprinkle olive oil on your bread and then sprinkle breakfast zahter on it. I also like to consume it with butter.

How is zahter dried?
Spread some of the fresh zahter you bought from the market on a tray and leave it in a warm place out of direct sunlight. Thin leaves dry completely in 1-2 days. (I dried it on the balcony of the cottage) Then crumble it with your hands and put it in a jar.
Zahterin is also brewed with tea. Just like green tea, you need to prepare it without boiling. You can drink 1 teaspoon in 1 cup of hot water and infuse for 5 minutes.
