If there's one thing I love more than pasta salad, it's pasta salad with yogurt :)) I eat it morning, noon and evening, whenever I think of it. As a matter of fact, if there is a pasta salad in the fridge, I will come and go and finish it without giving anyone a chance.

I'm trying to stay away from this right now, but if you want, you can add 1-2 tablespoons of mayonnaise to the salad.

Ingredients for the Yogurt Noodle Salad Recipe

  • 1,5 cups of Noodles
  • 2 spoonful butter
  • 2 cup of hot water
  • 2-3 tablespoons of chopped dill
  • 1-2 tablespoons of chopped parsley
  • 2 capsicum peppers
  • 3-4 stalks of spring onions
  • 3-4 pickled cucumbers
  • Olive oil
  • Salt
  • 4-5 tablespoons of yoghurt
  • 1-2 cloves of garlic

How to Make Yogurt Noodle Salad Recipe?

  1. Take the butter in a saucepan and melt it, add the vermicelli and fry until they change color.
  2. Add the salt and hot water to the roasted vermicelli, mix, and close the lid of the pot and cook on low heat until the water is gone.
  3. Cover the cooked vermicelli and let it rest for a while to brew and cool.
  4. While the noodles are cooling and brewing, chop the peppers, pickles and greens that you have washed and dried.
  5. Add crushed garlic, yoghurt, salt and chopped ingredients to the cooled vermicelli and mix.
  6. Refrigerate for 1-2 hours and then serve.
