Green Lentil Salad (Beetroot)
Hello Dear Friends,
In winter, I like legumes salads more. Especially green lentil salad one of my favourites. In fact, this recipe, which we often serve cold, can be great when served warm. So, I think, either serve it warm, or take the sauce and let it rest for 2-3 hours so that the flavor can fully settle.

Ingredients for Green Lentil Salad (Beetroot) Recipe
- 1 cup boiled green lentils
- 4 small boiled beets
- 1 small onion
- quarter bunch of parsley
- pomegranate seeds
- salt
For the sauce:
- 4-5 tablespoons of olive oil
- 2 tablespoon of balsamic vinegar
- 1 tablespoon pomegranate juice
How to Make Green Lentil Salad (Beetroot) Recipe?
- Boil the beets and green lentils in separate pots.
- Drain the green lentils, peel and dice the beets. Take them together in a deep mixing bowl.
- Add finely chopped onion and chopped parsley to the lentils.
- Whisk all the ingredients for the sauce in a small bowl. Add it to the salad along with the salt and mix.
- Serve your salad warm or cold.
