It was a soup that I loved to drink for a while, then I didn't put it in my mouth for almost 2 years. yoghurt soup used to say in our childhood :)

This recipe is one of the foods I can't say no to even if I'm sick. You can make it more satisfying by adding some boiled legumes while it's cooking.

Ingredients for Plateau Soup Recipe

  • 4 tablespoons of rice (half a teaspoon)
  • 1 cups of broth
  • 5-6 glasses of hot water
  • 2 tablespoons of flour
  • 1 egg yolk
  • 1 glasses of yoghurt
  • dry mint
  • 2 spoonful butter
  • 2 tablespoon of olive oil
  • salt

How to Make Highland Soup Recipe?

  1. Take the rice in the pot, add water and broth and boil it.
  2. Whisk the flour, egg yolk, 1 cup of yogurt in a deep bowl.
  3. Take 1-2 ladles of the boiling soup and add it to the yoghurt mixture to warm it up, mix it and add it back to the soup.
  4. Heat the butter and olive oil, add the mint and fry.
  5. Add the roasted mint to the soup. After boiling for one more time, add salt and serve.

    I tried it for the first time, I made it in my own way, but I roasted mint and sumac in plain oil and poured it on it, it was very delicious. Even my son ate it :)

    I don't know how yours turned out to be good, but mine was not good at all. You said 4 tablespoons of rice. My soup turned into baby food after half an hour. I don't understand there is something wrong.

      The consistency is up to you. Adding hot water while boiling and mixing will be enough to open it.

    I use split rice instead of rice for this highland soup. It is very delicious. If you soak the slices the night before, it will be boiled much more easily and if you use the yogurt you made yourself, it will be even more delicious. Thank you

    Will it be the same measure (4 cups) when we use normal water instead of broth? Since the broth is more viscous, I think that the consistency may not be the same as normal water.
