Ingredients for Tutmaç Soup Recipe

  • Half a cup of lentils
  • Half cup of noodles
  • 7 water glass of water
  • Half a glass of yoghurt + yoghurt water
  • 1 tablespoons of flour
  • 1 tablespoon olive oil + 1 tablespoon butter
  • 1 egg yolks
  • 1 meat bouillon

How to Make Tutmaç Soup Recipe?

  1. Take the green lentils that you soaked 1 night before in the pot. Boil for 5 minutes on medium heat, strain and set aside.
  2. Put the noodle in the pan with the oil and fry it. Add the lentils and water and bring to a boil.
  3. Whisk yogurt, 1 egg yolk and flour in a bowl. Add 2 scoops of yoghurt from the boiling soup water and whisk well to let it cool.
  4. Add the whipped yoghurt seasoning to the soup and cook on medium heat until it thickens. Serve hot.

    Our Bingöl region's stick is different, if you want, it is made with plain but strained yoghurt if you want it, it is made from phyllo that has been opened in the size of ravioli in summer, it looks like dried (I can't remember the name) mint, we fry it with oil and pour it on it.
