Persimmon (Paradise Date) Cake

Today was so busy that I couldn't tell when it was evening. If I say that I have recently become unable to work from holding meetings, maybe I can explain my situation a little bit. When I say the phone and meeting traffic that starts in the morning, the stress of moving from one place to another in Istanbul (more boring for someone who works at home & office like me), I feel like a piece of pulp at home. Today, instead of my waiting recipe to relieve tiredness and sweeten both my cat's and your mouth, this yummy Persimmon (Paradise Date) Cake I decided to share my recipe :)
Hani Paradise Date Cookie I mentioned it in my recipe, because I couldn't get enough of eating dates this year, it definitely is. When such delicious recipes come out, I buy dates again :) I used nutmeg and cloves in this recipe, and I would definitely recommend you to use them too. Just before use to preserve their intense aroma. nutmeg I suggest you grate it and beat the cloves in a mortar.
In addition, the most important feature of this cake is that it is cooked at a lower temperature than a normal cake, therefore it takes longer. This will give your cake a perfect texture, and you will have a moist and cottony cake at the end :)
I divided the cake into two molds, but you can also bake it in a single cake mold. This may extend the cooking time by 10-15 minutes, but as I said, the result will be legendary.

Ingredients for Persimmon (Paradise Date) Cake Recipe
- 3 pieces of eggs
- 280 gr flour (2,5 cups)
- 1 pack of baking powder (10 g)
- 2 teaspoon of baking soda
- 2 teaspoon of ground cinnamon
- Half a teaspoon of nutmeg
- Half a teaspoon of crushed cloves
- Half a teaspoon of salt
- 1,5 cups of date puree
- 1 cup of sunflower oil
- 270 g granulated sugar (1,5 cups)
- optional powdered sugar (for decoration)
How to Make Persimmon (Paradise Date) Cake Recipe?
- Mix flour, salt, baking powder, baking soda, cinnamon, nutmeg and cloves in a bowl and set aside.
- For Date Puree: Peel and core 2 soft persimmons, then blend them in a blender.
- Date puree , sunflower oil and sugar in a separate bowl ; Whisk until the sugar dissolves.
- Add the eggs and continue beating.
- Then add half of the flour mixture you just prepared to the date mixture. Mix from bottom to top with spatula. When it is completely mixed, add the remaining flour and mix.
- Grease the cake mold you will use. Pour the cake mix into the mold, just over half of the mold. (I divided it into 2 molds so that it cooks in a shorter time. You can also cook half of it in muffin molds)
- Bake in an oven preheated to 165 degrees for 50-60 minutes. (Check it by inserting a toothpick or knife, if it comes out clean, it's cooked.) It was cooked in 2-40 minutes because I divided it into 45 molds.
- Take it out of the oven and let it cool for 10-15 minutes, take the cake out of the pan and serve it with powdered sugar.
