One of the recipes that Cihan Chef from Delphin Imperial shared with us for Ramadan is Seasoned Veal Boiled… It has some differences with what we make at home.

While preparing this recipe in our homes, we do not pour the broth. We remove the foam that accumulates on it so that it does not form sediment, but after the seasoning is done, our dressings do not turn white because of the dark color of the first boiling water. However, if you want a more intense taste, you can use it.

Another difference is that we usually use flour, lemon and eggs when we prepare at home, while they are added to yogurt to add an extra sourness.

Ingredients for Seasoned Beef Stew Recipe

  • 400 g beef cubed
  • 2 tablespoons of oil
  • 2 medium potatoes
  • 2 medium carrot
  • 5 sprigs of fresh thyme
  • 2 cloves of garlic
  • 10 shallots
  • 2 tablespoons of margarine (you can use oil if you want)
  • 2 tea spoon salt
  • 1 tea spoon black pepper

For dressing:

  • 4 tablespoon of yoghurt
  • 1 tablespoons of flour
  • 1 egg yolks
  • Juice of half a lemon

How to Make Seasoned Beef Boiled Recipe?

  1. Take 2 tablespoons of oil in a saucepan. Add the meat and sauté until it turns brown.
  2. Add water until it covers the meat by 2-3 fingers and boil it for 35-40 minutes (Meat should be soft).
  3. While the meat is boiling, peel the potatoes, carrots, onions and garlic. Chop the carrots and potatoes.
  4. Drain the first boiling water of the meat that turns brown and set aside. (This process is done so that the dressing is free of residue and white. If you want it, you can not pour it.)
  5. In a separate pot, sauté the onion and garlic for 2 minute with 1 tablespoons of oil. Add the boiled meat to the pot and add 5 cups of hot water. Add salt and pepper and let it cook on medium heat.
  6. Add carrots, potatoes and fresh thyme near the cooking time of the meat and cook until the vegetables are tender.
  7. Put yoghurt, lemon, flour and egg yolk in 1 glass bowl and whisk. Add the water from the cooked meat to the seasoning little by little to warm it up and open its consistency.
  8. Add the seasoning to the cooked food and mix it. Cook for 5 more minutes on medium heat, remove from the stove, serve hot.
