Tenderloin in the Pan

I've been posting a lot about meat dishes these days, because, as I explained in my grilled steak recipe, I usually refrain from cooking meat at home. In one of my Instagram posts, a reader said that I would eat out because I was afraid that I would dirty the meat. Another mentioned that although he bought a cast iron pan just to cook meat, he could not catch the flavor of the meat outside.

The biggest difference in this recipe is that the tenderloin doesn't need to be marinated or cooked on the grill and then in the oven.
If you have a good frying pan, you can reduce the process with some ingredients and cook meats like cotton. When buying your meat, tell your butcher that you do not want the meat to be thinned. It is important that the meat is 1-1,5 cm thick. Otherwise, you need to cook meat faster in a shorter time.

Ingredients for the Pan-Fried Tenderloin Recipe
- 1 tenderloin (140 gr) per person
- 1-2 cloves of garlic
- 1 spoonful butter
- 2-3 stalks of fresh thyme
- 1 cup olive oil for frying
Fabrication:
- Season both sides of the 1-inch-thick tenderloin with salt and pepper to taste.
- Take 1 cup of olive oil in the pan and heat it until the smoke comes out.
- Take the tenderloin in the pan and cook it for a total of 4 minutes, turning it over.
- Transfer the fried tenderloin to a plate or board.
- Pour the olive oil into a bowl. Return the tenderloin to the hot pan.
- Without putting the pan on the fire, add the butter, fresh thyme and garlic. (We do this so that the oil does not burn immediately)
- Take the pan on the stove, turn both sides and flavor it with butter.
- After cooking for 1-2 minutes, take it to the cutting board and serve by slicing.
