Ingredients for Fresh Herb Zucchini Frying Recipe
- 3 zucchini
- Half a bunch of parsley
- Quarter bunch of dill
- 6-7 leaves of basil
- 4 stalks of scallion
- salt
- black pepper
- cherry tomatoes optional
How to Make Fresh Herb Zucchini Pan Recipe?
- Wash the zucchini and cut into 2 inch thick slices. Let it cook on medium heat in a pan with very little oil.
- While the zucchini is cooking, finely chop the greens.
- Place the cooked zucchinis on a serving plate and add the greens to the remaining oil in the pan and saute.
- Add tomatoes, salt and pepper, cook for another 2-3 minutes and spread over the zucchinis.
- Mix labneh and yoghurt for the sauce, serve alongside or on top of the zucchini.
