Chicken Islim (Toothpick) Kebab

Hello Dear Friends,

Islim kebab, aka toothpick kebab is one of my favorite recipes. Meatballs, meat and chicken, that is, whichever type of meat you choose, the result is eye-catching and delicious.

I prepared 2 recipes for them that I prepared with pleasure. The magazine is on sale at all dealers. In fact, while I was writing the article, I received one by courier :)

  • 500 g boneless chicken (diced)
  • 4 medium eggplants
  • 1 medium onion (chopped)
  • 2 medium tomatoes (peeled and diced)
  • 1 cloves of garlic
  • 1 meal spoon tomato paste
  • 1 teaspoon salt, black pepper, red pepper flakes
  • Half a glass of oil for frying the eggplants

For the above:

  • 10-15 cherry tomatoes
  • 2-3 green peppers

For the sauce:

  • 1 water glass of water
  • 1 meal spoon tomato paste
  • 1 tea spoon salt


  1. Peel the eggplants, slice them in 1 cm thick lengthwise, fry them and put them on a plate with a napkin.
  2. Add 2-3 tablespoons of vegetable oil to the pan and sauté the chopped onion and 1 clove of garlic for 2 minutes.
  3. Add the chicken cut into cubes on the onions and sauté for 3-4 minutes until it releases its water and absorbs it.
  4. Add tomatoes, tomato paste and 1 month glass of hot water to the chicken and cook until the water is gone.
  5. Put the 2 fried eggplant slices on the counter in a plus shape. Put 1-1,5 tablespoons of chicken mortar in the middle.
  6. Cover the eggplant slices on the chicken and put 1 slice of pepper on it. Add the cherry tomatoes on it and stick 1 toothpick.
  7. Mix well 1 glass of water, 1 tablespoon of tomato paste and 1 teaspoon of salt.
  8. Arrange the prepared kebabs on the tray and add the tomato paste sauce.
  9. Bake in a preheated oven at 180 degrees for 15-20 minutes.

  2. Hi Nilay, I lubricate the eggplant slices with a brush and fry them on the grill or in the toaster and make both the meat and chicken of this dish, it is very light.
