Chicken tagine is a classic Moroccan recipe. In fact, it is served with couscous instead of bulgur and can be prepared with lamb if desired. Although the ingredient list is a bit crowded, it is simple to make and incredibly delicious.

For serving, you can choose a practical bulgur pilaf that you prepare without using tomatoes. You can use couscous if you want, but I think it is more delicious and stylish because the bulgur absorbs the water from the chicken.

Ingredients for Chicken Tagine Recipe

  • enough sunflower oil
  • 1 kg chicken thigh and hip (with bone)
  • 1 onion (peeled and diced)
  • 1 pinch of saffron (1 tablespoon of warm water for demi)
  • ½ tablespoon of powdered ginger
  • 1 tablespoon of turmeric
  • ½ tablespoon of cumin
  • ⅛ tablespoon of cayenne pepper
  • 1.5 lt. That
  • 30 gr. honey
  • 2 cinnamon stick
  • 2 zucchini diced
  • 120 gr. prunes (chopped)
  • 90 gr. apricot (chopped)
  • 300 gr. chickpeas (pre-boiled)
  • some shelled almonds (optional)
  • 15 gr. fresh coriander leaves (optional)
  • salt to taste
  • black pepper to taste

How to Make Chicken Tagine Recipe?

  1. Heat some sunflower oil in the pan. Season the chicken pieces with salt and pepper and lightly fry in sunflower oil. Then set it aside.
  2. Put the onion in the same pot and cook it until it turns transparent.
  3. Add the saffron infusion, ginger, turmeric, cumin, coriander and cayenne pepper and cook for a short while.
  4. Add the water, honey and cinnamon sticks. Turn down the heat after boiling a pot. Put the chicken pieces in the pot and cook with the lid open for 25 minutes.
  5. Add the zucchini, prunes, apricots, and chickpeas. Cook until all vegetables are soft. Adjust the salt and pepper settings.
  6. Serve over bulgur pilaf.

    What does saffron brew mean and we only cook my onions and spices, the bulgur pilaf is cooked, I am confused when the chicken is included in the meal :)

      I think I wrote gr instead of 30 ml :) If you use Tsp measurements in the kitchen, 2 tablespoons will be enough.
