Potato Eggs with Sweet Potatoes

I love mashed potatoes, it was one of my favorite meals when I was a student. It is always one of my first choices if I am hungry and want to take the easy way out and eat something delicious.
I was glad to see sweet potatoes at the grocery store 2 weeks ago. You might say why are you so glad you're a big potato, but it's not :) I don't know if you have followed the programs of foreign chefs, but it is an ingredient that is used a lot in most of them, especially in America. It is included in many recipes from porridge, bread, cake, soup and dessert. It is even a vegetable that comes out of the baskets frequently in a program called “Chopped” where chefs compete. Anyway, it was exciting to taste something that I've seen so many times and heard the name of.
The difference from our potato is as much as its taste, this is a very sweet potato type. I tried the fries and porridge. Frying doesn't work very well in oil, but it tastes great if you make a sandwich with smoked turkey breast when it's flaked and fried. (We also tried a wrap, a feast for full houses mixed with avocado :)
By the way, after doing some research, I saw that there are a zillion varieties of sweet potato. Red rind with white core, reddish rind with orange core, softer texture etc. There is even a type called yam, which is not actually a potato and is discussed in America. (I hope that friends abroad will make more informative comments on the subject :) )
I liked the sweet potato egg as I like mild sweet flavors with meats and eggs. The good thing is that a small amount is satisfying and keeps you from feeling hungry for a long time.

Ingredients for Sweet Potatoes and Potato Eggs Recipe
- 1 medium sweet potato
- 2 pieces of eggs
- Half of 1 small red onion
- 2 tablespoon of olive oil
- salt, pepper
- 1-2 sprigs of rosemary
- optional red pepper flakes
How to Make Potato Eggs with Sweet Potatoes?
- Peel the potato and cut it into cubes. Chop the onion either for food or for pickling.
- Put the potatoes in the pan with olive oil and fry for 1 minute. Add the onions and continue frying for 3-4 minutes.
- Add the finely chopped rosemary leaves along with salt and pepper and fry for a short while.
- Add the eggs to the cooked mortar and cook to the desired consistency and remove from the stove.
- Serve with rosemary and paprika.
