From the easternmost to the westernmost part of the country, tarhana is made differently in every province. It is mostly made in the summer and stored for the winter. Generally, flour, yoghurt or milk, onion, tomato, red pepper, salt and various spices are used in its production. The dough is fermented and rested by covering it with a clean cloth. It crumbles as it dries and is stored in bags or jars.

Kastamonu's fresh tarhana tastes like spring. And of course, there is the herb tarhana, which was given to me for the first time in a village in Şile and I was surprised when I saw it… Its production is like normal village tarhanas, but you first melt this tarhana in water and strain the herbs in it.

No matter how tarhana is prepared, there will always be a little onion next to the soup I will drink. I want to make my own tarhana at home this summer, but I think it will be difficult in the humid weather of Istanbul.

Ingredients for Tarhana Soup Recipe

  • 6 tablespoons of tarhana
  • 1 liter (5 cups) of water or broth
  • 1 tablespoon tomato paste
  • 4 tablespoon of olive oil
  • 1 cloves of garlic
  • salt

How to Make Tarhana Soup Recipe?

  1. Mix the tarhana thoroughly with 1 glass of water.
  2. Put the tomato paste, 1 clove of crushed garlic and the oil in the pot where you will cook the soup. Fry until the garlic smell is gone.
  3. Add 4 glasses of water to the pot and bring it to a boil. Add the melted tarhana into it and cook on low heat, stirring until it thickens.

Note:

  1. In our house, tarhana soup is cooked with a thick consistency, you can use more water if you want, or you can reduce the amount of tarhana.
  2. If the soup increases, it will thicken overnight, if you add at least half a glass of water and boil it by mixing, it will return to its old consistency and preserve its flavor.

    As I learned from my mother, I pour 1 glass of milk into it and when serving, white cheese pieces and mint chili pepper butter and crusty bread pieces are delicious :) I recommend. My wife didn't like this soup very much, now she loves it when she tries it this way :)

    I first add oil and then when the oil is slightly heated, I add mint, red pepper and chili pepper, add the tarhana and fry it. After 2 minutes or so, I add the water, believe me, it tastes better when it is roasted :) I recommend it.
