Surk is one of the most delicious cheeses of Mediterranean cuisine. It leaves a rich taste on the palate thanks to the aromatic spices it contains. You can also add cinnamon, allspice, nutmeg and garlic according to your taste to this delicious cheese, which is generally preferred in breakfasts and salads.

Ingredients for Surk Recipe

  • 500 grams of curd
  • 500 grams of curd 
  • 1 tablespoon of pepper paste
  • 1 tablespoon of red pepper flakes
  • 1 tablespoon of black seed
  • 1 teaspoon of dried mint
  • 1 tablespoon of zahter
  • 1 tablespoon cumin
  • 1 sweet spice salt 

How to Make Surk Recipe?

  1. Place the cottage cheese and curd into a deep kneading bowl. 
  2. Add tomato paste and spices and knead until it becomes dough-like. 
  3. Cut some smaller pieces from the orange and shape them.
  4. Place the shaped scarves on a tray lined with a clean cloth.
  5. Cover it with a thin tulle and dry it on the balcony in a place out of direct sunlight for about 3 days.
  6. Stretch the dried scarves one by one and store them in the freezer. 
  7. Take it out and slice it 1-2 hours before eating.
