Stuffed Celery with Meat

I tasted this recipe for the first time with Ali Usta. During my 1,5-month internship at Kivahan, I am quite training since I made about 100 stuffed celery.

Ingredients for Stuffed Celery with Meat
For 4 pieces of celery:
- 250 g medium fat ground beef
- 1 large onion, grated
- 5 tablespoons of stuffed rice
- 1 pinch of finely chopped parsley
- 1 pinch of finely chopped celery leaves
- 1 pinch of finely chopped dill
- 1 pinch of fresh mint, finely chopped
- 2 cloves of crushed garlic
- black pepper, paprika, salt
- optional 1-2 tablespoons tomato paste (I didn't use it)
For the juice:
- 4 tablespoon of olive oil
- 1 tablespoon tomato paste or 1 tomato grated
- salt

- Juice of 2 lemons + water to prevent the celery from browning

How to clean celery?
- Peel the celery and smooth the surface as best you can.
- When peeling the bark, leave 2 of the leafy branches at the top uncut.
- Trim off the excess of the remaining leaves at the root.
- Set aside the fresh and green leaves of the leaves you cut.
- Now cut the top of the celery like a lid and carve the inside of the celery with a zucchini cutter or a small watermelon knife and leave it in water with lemon so that it does not turn black.
- Poke holes with a knife just before stuffing the stuffing.
Preparation of the inner mortar:
- Finely chop the onion and all the other green stuffing.
- Mix the minced meat, onion, chopped greens and all the remaining ingredients thoroughly.
- Fill the carved celery with minced meat.
- Place the celery and celery caps in the pan. Dissolve the tomato paste with water and add it to the pot with enough water to reach half of the square zucchini.
- Drizzle some olive oil over it and sprinkle with salt.
- Cook on low heat for about 45 minutes until the celery is completely soft.
