Hi Friends,

I haven't been able to write to you for a while. Of course, this wasn't because I neglected you. We lost my precious grandma recently. Many people who had the opportunity to know their grandmother, especially those who grew up with her, will understand how I feel. When one of the most important members of your family passes away, you feel deep in your heart that the biggest part of your childhood and youth is also saying goodbye to you.

As I end with one of my mother's favorite recipes from my grandmother's hometown and my mother's, I wish God's mercy on my unique tone. May there be light where you sleep, sleep peacefully with my grandfather..

Spinach Pita

Spinach Pita: Ingredients for Mancarli Recipe

  • 3 piece of bread dough
  • Flour for rolling out bread dough

Inner material:

  • 300 gr. spinach
  • 10 sprigs of fresh mint
  • 2 pieces of green pepper
  • 1 medium onion
  • Salt, pepper, red pepper
  • Red beet leaves upon request
  • 2 tablespoons oil

Instructions

  1. Chop the onion for edibles, wash all the remaining greens thoroughly and chop into large pieces.
  2. Add oil to the pan and fry the spinach for 3-4 minutes over medium heat until it wilts slightly, then remove it from the stove.
  3. Take the bread dough you bought from the oven in a large bowl, cover it and leave it until it becomes 2 times.
  4. Break off apple-sized pieces from the dough and roll them lengthwise on the floured counter with the help of a rolling pin.
  5. Spread the spinach mixture in the middle of your dough, leaving 2 cm each from the edges. Fold the left edges inward.
  6. Bake your pita breads on a baking tray lined with greaseproof paper, in a preheated 200 degree oven until golden brown. Serve hot or cold.
