After a long holiday, I have accumulated a lot of recipes to share with you :) In some of them, my guests tried it, in others I tried it in places where I was a guest and I immediately got the recipe :)

Last weekend, I was at the Boutique Hotel Beyaz Ev Agva, which has been meticulously managed by dear Renkin and Aslı for years. This time, we stopped by not to stay but just to taste those delicious breakfasts again and to see them.

The table was colorful and delicious again. I this time stir fry with mushrooms I love it :) All these years stir fryI cooked the mushroom and the mushroom separately but mushrooms in stir-fry it was legendary.

Also, I usually cut vegetables into rounds, but I really liked them in cubes as well.

Materials: 

For frying:

  • 2 large potatoes
  • 2 capsicum peppers
  • 4 pieces of green pepper
  • 2 eggplants
  • 8-10 mushrooms
  • salt
  • oil for frying

For the Tomato Sauce:

  • 3 large tomato
  • 1 cloves of garlic
  • 1 sugar cube
  • salt
  • 1 tablespoons of vinegar
  • 1-2 tablespoons of oil

For the Yogurt Sauce:

  • 1 bowl of yoghurt
  • 1 tablespoons of strained yogurt
  • salt

How to Make Mixed Roast with Sauce (Mushrooms) Recipe?

  1. Chop the potatoes, the peppers that you have removed the seeds from, the eggplants that you have peeled and the mushrooms, all in equal sizes.
  2. Soak each one in salted water for half an hour in separate bowls, then drain the water and put it on paper towels and drain the excess water.
  3. Heat the oil in the frying pan, Fry the potatoes, peppers, mushrooms and eggplants respectively.
  4. Whisk 1 spoon of strained yogurt and salt into 1 bowl of yogurt and set aside.
  5. For tomato sauce, grate 3 large tomatoes, add garlic, salt and 1 cube of sugar and cook with 1-2 tablespoons of oil.
  6. Immediately after the sauce is cooked, add 1 tablespoon of vinegar and mix.
  7.  Take the fried vegetables on the serving plate and serve with yoghurt sauce on the tomato sauce first.
