Earlier endive salad I mentioned the benefits of this plant in the recipe. I liked it better than the omelet salad I prepared using white chicory.

I think the taste of chicory, which is boiled first and then sautéed with onions and peppers, is much better.

Ingredients for Onion and Endive Omelet Recipe

  • 2 white chicory
  • 3 pieces of eggs
  • 1 small onion
  • 1 sweet red pepper
  • 1 spoonful butter
  • 1 tablespoons of oil
  • Salt
  • Black pepper

How to Make an Onion Endive Omelet Recipe?

  1. Wash the endive leaves without separating them and put them in the pot. Squeeze some lemon into the water and boil for 3-4 minutes.
  2. Drain the boiled endive and finely chop. Peel and chop the onion. Chop the red sweet pepper into rings and remove the seeds.
  3. Mix the butter and oil, heat in the pan. Take the onion and red pepper and sauté for 2 minutes. Add the chicory and cook, stirring, until the water evaporates.
  4. Beat the eggs in a bowl. Pour over the cooked chicory and spread.
  5. Serve by cooking on a low flame.
