Onion kebab

Onion kebab is a delicious recipe that I had the opportunity to prepare and eat with my dear Ali Usta years ago. Of course, eating from the hands of Antep is different, but we do not always have such a chance, so we will take care of ourselves :)
This recipe is very easy to prepare and cook, but there are some important points in the ingredient list that you should pay attention to. Generally, red-skinned winter onions are used, but if you can't find them, it's okay. Onions should be small in size. Between eggs and tangerines, you should prefer onions of equal size.
For the ground meat, a mixture of lamb and beef, medium fat and coarsely ground, is most preferred. The tomato paste you will use may be tomato, but the flavor of the pepper & tomato mixture is also different.

Ingredients for Onion Kebab Recipe
- 1 kilo small onion (tangerine size)
- 350 g low-fat ground beef
- Red pepper (optional)
- Black pepper
- Salt
For the sauce:
- Quarter tea glass of pomegranate syrup (not sauce, real sour)
- 1 dessert spoon tomato paste
- 1,5 tea glass of water
How to Make Onion Kebab Recipe?
- Put the minced meat in the mixing bowl. Add salt, black pepper and red pepper and knead for 5 minutes. Cut into pieces as many as the number of onions, roll and set aside.
- Cut the tassels on the tops of the onions with a knife. Wash and remove the first layer of skin of the onion.
- Cut it right in the middle with a knife, but leave a 1-2 cm margin at the end so that the onion does not completely separate.
- Divide the onions, squeeze the meatballs between them and arrange them on the tray. Continue this process until all the onions and ground beef are finished. (The onions need to be tight so that they do not open, choose a tray of appropriate sizes.)
- Bake in a preheated 250 degree oven until the color of the onions and meatballs changes.
- Whisk together the pomegranate syrup, tomato paste and water in a bowl. Take the cooked onions from the oven and drizzle this sauce over them with the help of a spoon.
- Cover the tray with aluminum foil and cook for another 10-15 minutes until the onions are completely soft. Serve hot.
