Soda Pie
I made the soda pastry with the phyllo dough I bought from the market last week. Even though the yufkas were kept in the refrigerator for almost 5 days, they never deteriorated and went stale, pastries were made easily and without tearing.
I usually have problems with the phyllo dough I buy from the market. It is both thick and hard, and when you take the dough in your hand, it is in pieces. Of course, you start to get bored, and when you experience such situations, you can use soda to soften the dough. Soda Pastry is soft and delicious just like water pastry.
If there is a phyllo maker that you believe is clean, I recommend that you buy your phyllo from the phyllo store, not the market.

Ingredients for Soda Pie Recipe
- 4 pieces of dough
- 1 pieces of eggs
- 1 glasses of yoghurt
- 1 water glass measure of oil
- 1 mineral soda (200ml)
For the stuffing:
- 250 gr. feta cheese
- Parsley
How to Make Soda Pie Recipe?
- Chop the parsley, mash the cheese with a fork and mix with the parsley.
- Spread baking paper or silpat on the baking tray. Lay 1 piece of phyllo on it so that the edges overflow from the tray. Divide the remaining phyllo into 3-4 pieces in your hand and combine them to be laid in 1 layer.
- Whisk eggs, yogurt and oil thoroughly, and brush with a brush or spoon to cover the dough.
- Spread sauce on each layer of dough and sprinkle with cheese. When it comes to the last part, cover the bottom of the wide pastry neatly on the pastry.4. Lay the dough on the pastry and fold the overflowing parts to the bottom of the pastry.
- Spread the remaining sauce on the pastry and slice it. Pour 1 bottle of soda over the pastry to wet it all over. Wait about 5 minutes for it to absorb the soda.
- Bake in a preheated 180 degree oven until nicely browned (approximately 25 minutes).
