I have a savior soup recipe for the last 2-3 months. I say savior because Nehir loves this recipe. I also prepare it with different vegetables or legumes once a week and put it in the freezer. It is very useful for me to pass more than half of it through the blender and give it the consistency of food, and then fill it in portion jars and finish it off. I thaw it in the microwave and add a little more broth or water, opening the consistency slightly.

Ingredients for Vegetable Legume Soup Recipe

  • 2-3 pieces of broccoli
  • 1 small potatoes
  • 1 carrot
  • 1 onion
  • 2 cloves of garlic
  • 1 Turkish coffee cups rice
  • 1 cup of Turkish coffee bulgur
  • 1 cup of Turkish coffee red lentils
  • 1 cup of Turkish coffee boiled chickpeas
  • 2.5 cups of broth
  • 4 water glass of water
  • 2 spoonful butter
  • 2 tablespoon of olive oil
  • 2 teaspoons of mint
  • 1 teaspoon sweet red pepper flakes 
  • salt
  • boiling water after blending (amount is up to you)

How to Make Vegetable Legume Soup Recipe?

  1. Chop the onion, garlic, carrot, potato and broccoli for edibles.
  2. Put the olive oil and butter in a pressure cooker. When the oil is hot, add the chopped vegetables and fry them.
  3. After roasting the vegetables for 2 minutes, add the legumes and spices and fry for 1 more minute. 
  4. Add water and turn off the pressure cooker. Cook for 25 minutes on low heat after the whistle blows.
  5. Pass the cooked thick soup through the blender. (At this point I put more than half of it in small jars for my daughter and pop it in the freezer when it's cold)
  6. Add boiling water until the soup reaches the consistency you want and turn it on.
  7. Boil one more time and take it off the stove.
  8. If desired, heat the red pepper and some mint with a little oil.
  9. Drizzle over the soup and serve.
