Actually, it all took shape while I was thinking about what to do for the 1st year of culinary secrets. I was torn between making a classic cake and making muffins, and I decided that I didn't want to make a classic cake. For some reason, cream muffins or one-person cupcakes seem warmer to me. The muffin that the kitchen secrets girl smiles at you is actually a sponge cake muffin or a tiny cake for one person :) Inside is my cherry jam and cream, which I made myself (the recipe for which I still can't write to you). I spread the rest of the muffins dough thinly on the baking tray and baked it, let's see what I can get out of it, and tiny cakes came out. For the sponge cake:

  • 3 pieces of eggs
  • 1 cups sugar
  • 1 water glass milk
  • 1 package baking powder
  • 3 tablespoons of margarine
  • 3 tablespoon of yoghurt
  • 1 packaged vanilla
  • Flour as much as it takes (add 1 cup at first)

For inside:

  • Cherry jam (but can be in a different jam)

For decoration:

  • sugar paste
  • Dark chocolate
  • Powdered sugar (for rolling out the sugar dough)

How to Make Mini Cakes with Jam Recipe?

  • For sponge cake, beat eggs and sugar at room temperature for 5 minutes at high speed.
  • Add all the ingredients except flour and whisk until a homogeneous and smooth mixture is obtained.
  • By adding flour gradually, a softer dough than the consistency of the earlobe is obtained.
  • The oven is heated to 180 degrees, the dough mixture is poured on the tray greased with margarine and a thin layer is formed.
  • About 20-25 min. The cooked sponge cake is left to cool.
  • After cooling, it is cut by cookie cutters. (Remember, it should be cut into 2 pieces each way.
  • Powder sugar is sprinkled on the counter to open the sugar dough.
  • The sugar dough is rolled out in a thin layer and cut with the molds you used to cut the sponge cake.
  • It uses the same mold for the piece that will form the top cover of each cake you will make.
  • The dark chocolate is melted in a bain-marie and sprinkled on the cakes with the help of a wooden stick, and the cakes are served on the serving plate.

    You will not experience this problem again if you check whether the sponge cake is cooked with a toothpick or wooden skewer before it comes out of the oven. If the toothpick comes out wet from the cake, you should extend the baking time even more.

    Hello Delfinac, I'm so glad you like the photo. I try to take all my photos in daylight without flash. I especially choose the morning hours when the daylight does not fall directly. Actually, since I'm at work at noon, I make dinner and get up 1 hour early in the morning and avoid going to work :)
