For a well-leavened pita, be sure to follow the kneading and resting times. If your house is warm, it may ferment more quickly if it is cool. Double the dough is enough. Let me repeat here, it is important to knead the dough well.

How is Ramadan Pita Made? Ingredients for the Recipe

  • 1 instant yeast (10 g)
  • 4-4,5 cups of flour (500 gr)
  • 1,5 cups + half a tea glass of warm water (350 ml)
  • 1 teaspoon of granulated sugar
  • 1,5 sweet spice salt
  • 2 tablespoon of olive oil

For the top:

  • 1 egg yolk
  • 1 tablespoons of water
  • Black seed

How is Ramadan Pita Made? How To Make The Recipe?

  1. Take the yeast in a deep bowl, add warm water and sugar to it and mix it.
  2. Start kneading by adding 4 glasses of flour, salt and oil to the foamed and activated yeast.
  3. Cover the knead until you get a dough that is not coarse but sticks to the hand, cover it in a warm place and leave it to ferment for 45 minutes.
  4. Take the fermented dough on the floured counter, knead lightly, divide it into 2 parts and collect it.
  5. Cover it on the counter where you sprinkle oat bran and leave it to ferment for 45-min - 1 hour.
  6. Whisk the egg yolk with water and shape the pita, sprinkle with black cumin, place on the baking tray, bake in the oven preheated to 200 degrees until golden brown.

    When we kneaded by hand, I had to add a little more than 500 grams of flour, because it is a must for it to stick to the hand, not the cup, and I am doing the right thing. Because I'm doing gram calculations too.
