Quince Wrap in Warm Caramel Sauce with Creamy Ice Cream
Quince Kapama is a dessert that I have tasted before and fell in love with. When I went to Nisantasi on Tuesday Zamane CoffeeI had a hard time not going to eat it. After the invitation to Zamane coffee, I said I want this recipe and this flavor should be made at home, they did not offend me and sent the recipe with its photo.

Ingredients for Covering Quince in Warm Caramel Sauce, with Creamy Ice Cream
- 1 square puff pastry dough
- 1 medium-sized quinces
- 500 gr granulated sugar
- 1 thin slice of lemon
- Half a liter of water
For the caramel:
- 1 spoonful butter
- 1 tea glass of granulated sugar
- 1 teaspoon of cream
- 1 teaspoons of water
For presentation:
- 30 g creamy ice cream
- 1 sprigs of fresh mint
- 2 g powdered pistachios
Fabrication:
- Put 500 gr granulated sugar, half a liter of water and a thin slice of lemon in the sauce pan. Mix it and put it on the stove and bring it to a boil.
- Divide the peeled quinces into this boiling syrup and cook them with their seeds.
- Thin the puff pastry dough a little with the help of a rolling pin. Then cut it with a mold as desired. (round or square,..) Pierce the cut dough with a fork.
- Take the quince cooked in the syrup from the syrup, cut them into thin slices and place them on the prepared puff pastry.
- Bake in a preheated 180 degree oven for an average of 15 -17 minutes.
- Caramelize sugar in butter in a separate pan, add water and cream and prepare caramel sauce.
- Take the cooked quince cover from the oven and sweeten with caramel sauce.
- Before the sauce cools down, take it to a serving plate and serve with cream ice cream, mint leaves and ground pistachios.

Actually, the recipe is very clear, but I will briefly summarize it. Thin the puff pastry dough by rolling it out with the help of a rolling pin. After cutting into circles or squares, place them on the baking tray.

I made a similar dessert with apples. I thinned the dough thoroughly and put the thinly sliced apple between it. Then I closed it and decorated all four sides with a fork. It was a square dessert, when it came out of the oven, the apple inside was like mashed.

1 dessert comes out of 1 square dough. That's why shaping sizes are limited to square puff pastry. After you cut the dough with a circular mold, you put it on a tray with greaseproof paper or silpat. Then you place the quinces on it.
