Potato Salad with Purslane Recipe
Hello Dear Friends,
I love wild purslane, I am very happy that it is now abundant in our garden. With the increase of precipitation and the warmer weather, it multiplied and started to grow rapidly. Wild purslane is slightly different from the ones sold in the market, first of all, its most distinctive feature is that it has a more sour taste. When you look at it, it is already easily separated from the other.
Its trunk is thick, but its leaves are smaller and dark green. I especially love the olive oil dish, this time I added it to the potato salad, but I will share the olive oil dish with you as soon as possible.
It was a great alternative to evaluate boiled potatoes at home, I would definitely recommend it.

Ingredients for Purslane Potato Salad Recipe
- 2 medium boiled potato
- Half a bunch of purslane
- 2 cloves of garlic
- 4 tablespoons of strained yogurt
- 1 tea spoon salt
- Red pepper
- 4-5 tablespoons of olive oil
- walnuts on request
Fabrication:
1. Peel and grate the boiled potatoes. Chop the purslane.
2. Add the crushed garlic and salt.
3. Add the strained yogurt and mix well.
4. Drizzle olive oil over the potato appetizer you have taken on the serving plate. Serve with walnuts, if desired.
