We left one more holiday behind. As you all know, Ramadan has been a very busy time for me. Thank God we finished by sharing a new menu and recipe every day.

Now I escaped to the cottage to get some rest. Of course, here, I usually prefer to be at home instead of eating out. Since we have occasional guests, I continue to prepare practical summer recipes.

Ingredients for Pumpkin Tarator Recipe

  • 3 medium zucchini
  • 1 handful of walnuts
  • 3 tablespoon of olive oil
  • 2-3 cloves of garlic
  • 1 glass of strained yogurt
  • salt

Fabrication:

  1. Peel and grate the zucchini.
  2. If it leaves too much water, squeeze out the water with your hand.
  3. Chop the walnuts and sauté the olive oil in the pan, take the walnuts and zucchini, and sauté them until their water is gone.
  4. Take the sautéed zucchini in a medium bowl and cool.
  5. Add yoghurt, salt and crushed garlic on top and mix.
  6. Let it rest in the refrigerator for 1 hour and then serve.
