Pumpkin Tarator

We left one more holiday behind. As you all know, Ramadan has been a very busy time for me. Thank God we finished by sharing a new menu and recipe every day.
Now I escaped to the cottage to get some rest. Of course, here, I usually prefer to be at home instead of eating out. Since we have occasional guests, I continue to prepare practical summer recipes.
carrot tarator you remember my recipe, pumpkin tarator is a delicious and practical recipe just like it. You can easily prepare it at home.
After chopping the walnuts with a fine knife, roasting them with the zucchini both gives a nice color and doubles the flavor.

Ingredients for Pumpkin Tarator Recipe
- 3 medium zucchini
- 1 handful of walnuts
- 3 tablespoon of olive oil
- 2-3 cloves of garlic
- 1 glass of strained yogurt
- salt
Fabrication:
- Peel and grate the zucchini.
- If it leaves too much water, squeeze out the water with your hand.
- Chop the walnuts and sauté the olive oil in the pan, take the walnuts and zucchini, and sauté them until their water is gone.
- Take the sautéed zucchini in a medium bowl and cool.
- Add yoghurt, salt and crushed garlic on top and mix.
- Let it rest in the refrigerator for 1 hour and then serve.
