I spent a weekend like a bomb when I was tired. With our appetite satisfied, we hit the road to discover new tastes and places. Most importantly, it was Metropolis Restaurant, where my classmate from Culinary Institute, Dear Devran, started to be the executive chef on Sunday.
Orange Artichoke Our culinary journey started with the unbelievable flavors that remained in the dusty pages of history. Adapted from the Ottoman Cuisine to the present and served with an elegant presentation. Mahmudiya It was definitely our favourite.
When we discovered Matropolis, I realized that we had been visiting Sultanahmet superficially for years, there are such pleasant places in its side streets that it must be seen. I think the tourists are more traveling and exploring than we are, because despite the crowd in the place, there was only one table other than us, the Turks.
If you want to taste delicious examples of world and Turkish cuisine, I would definitely recommend Metropolis.

Ingredients for Orange Artichoke & Metropolis Restaurant Recipe
- 8 artichokes
- 1 medium onion
- 2 medium carrot
- 2 medium potatoes
- 1 liter of orange juice (4 cups)
- 150 ml of lemon juice (1 tea glass)
- Salt
- Ground white pepper (optional)
- 3 teaspoon of granulated sugar
- 1 glass of olive oil
How to Make Orange Artichoke & Metropolis Restaurant Recipe?
- Chop the onion finely. Peel the potatoes and carrots and cut them into dice.
- Fry the carrots and onions until they caramelize (change color and give off their odour).
- Add the potatoes and artichokes to the pot. Add orange juice, lemon juice, salt and sugar to flavor it.
- Cook on low heat with artichokes until tender. Rest in the refrigerator for 1 night.
- Take it out of the refrigerator a while before serving and serve at room temperature.
