Leek Soup
When I felt a little better, I went into the kitchen 3 days later to make leeks with olive oil. There was leek in the cupboard, but there was no carrot, for someone like me who loves cooked carrots, leeks are meaningless if there is no carrot. Of course, I am not in the mood to go to the market.
I decided to make leek soup in the hope that it might open my already hard-smelling nose a little bit. It was a healthy and thick soup prepared in a short time.
I look like I will be preparing a lot in the coming days. It will look more elegant if you drizzle a small amount of spicy olive oil on it as I did while serving.

Ingredients for Leek Soup Recipe
- 5-6 leeks, cleaned
- 2 medium potatoes
- 1 medium onion
- If 1 liter of meat or chicken stock is not available (1 liter of water +1 chicken bouillon)
- 1 Turkish coffee half a cup of oil
How to Make Leek Soup Recipe?
- Finely chop the cleaned and cleaned leeks. Chop the onion for cooking and put it in the pot with the leeks.
- Add the vegetable oil and fry for 5-6 minutes until the leeks and onions soften and disperse.
- Add the peeled and chopped potatoes to the leeks and fry for 1 more minute.
- Add hot water and chicken bouillon to the pot and cook on low heat for 12-13 minutes with the lid closed.
- Pass the softened vegetables through the rondo and serve hot.
