It is very simple to make pita pastries, you can prepare them in any size you want, but it looks better if the largest is the size of the rim of a water glass. My mold dimensions were somewhere between a water glass and a tea glass. You can get this type of molds in sets of 6-7 from cake shops. Plastic ones are very affordable.

You can also use roasted ground beef and potatoes for the stuffing. You can serve it for breakfast, iftar and sahur.

I use standard cups, but if you are unsure of your cup size, start with 3,5 cups of flour. Then add little by little and knead.

For the dough:

  • 4 cups of flour (500 g)
  • 1 egg white
  • 1 water glass milk
  • 1 teaspoon salt
  • 1 teaspoon of granulated sugar
  • 150 butter
  • 1 pack of instant yeast

For inside:

  • 100 g of feta cheese
  • 5 tablespoons of grated cheddar cheese
  • 1 tablespoon chopped dill

For the above:

  • 1 egg yolk

How to Make Pita Pastry Recipe?

  1. Take the flour in a mixing bowl, add salt and sugar on it.
  2. Melt the butter, add it to the flour along with the egg white and milk. Finally, add the yeast and knead.
  3. After the dough comes together, take it to the counter. If the dough feels hard, sprinkle some water with your fingertips and continue kneading for 5 minutes.
  4. Shape the dough you have kneaded into a ball and rest it for 25 minutes by covering it with cling film.
  5. Roll out the fermented dough with the help of a rolling pin. Cut out circles with the help of a glass or mold.
  6. Put some stuffing in each circle and close it in the form of a pita by squeezing from both ends.
  7. Starting in the middle of the clamped mold or pyrex that you oiled, line up the tiny pitas.
  8. When all the dough is finished, brush with egg yolk.
  9. Bake in a preheated oven at 180 degrees for about 25-30 minutes.
