Eggplant Salad Recipe
I don't know how to start or what to write. I'm just writing to clear my head, maybe because I think we'll get out of this with positive energy and prayers from you.
I was always a kid who was keen on the kitchen, but I wasn't that much involved. Maybe because my mother's favorite dishes are always eggplant, the first recipe I prepared could be eggplant salad.
2 days ago, my mother said, "My daughter has been craving for a few days, make me an eggplant salad". I prepared it with the same ingredients as when I was a kid. I couldn't go, but I sent it with my wife.
Now I only have these photos in that intensive care unit. Let it stay that way, until the day I prepare it for him again.

Ingredients for Eggplant Salad Recipe
- 1 jar of canned roasted eggplant
- 3-4 sprigs of scallions
- 2 cans of roasted peppers
- Quarter bunch of parsley
- 2 cloves of garlic
- 1 medium tomatoes
- Wine vinegar
- Vegetable oil
- Salt
How to Make Eggplant Salad Recipe Recipe?
- Take the canned eggplant in a deep bowl.
- Add finely chopped parsley, spring onion, roasted pepper and tomato on top.
- Add the crushed garlic.
- Mix all the ingredients by adding vinegar and oil.
- Refrigerate for 1-2 hours and serve.
