You know more or less how much I love my eggplant dishes :) For the first time this year, we had the chance to cook from the eggplants we grew in our own mini orchard. I guess we couldn't get enough of it, both in terms of breed and because we raised cats. While I was picking up the last eggplants and removing the seedlings, I wanted to say goodbye to a dish that I love very much.

I also realized that while I have dozens of eggplant recipes from moussaka to olive oil, from salad to skewers, there is no eggplant sitting recipe on my blog :) On this occasion, I shared the recipe on the blog. For me, my favorite things next to such dishes are tzatziki and rice. You can find my rice pilaf and tzatziki recipes here.

Ingredients for the Eggplant Sitting Recipe

  • 3 eggplants from the garden
  • 200 gr mince
  • 1 onion
  • 1 cup tomato puree or 1 medium tomato
  • 2-3 tablespoons of finely chopped parsley
  • 3-4 tablespoons of olive oil
  • Salt, pepper, cumin

For the sauce:

  • 1 teaspoon of tomato sauce
  • 1 water glass of water
  • Salt
  • black pepper

For the above:

  • Cherry tomato
  • Beaver

How to Make Eggplant Sitting Recipe?

  1. Wash the eggplants, cut off the stems and peel the variegated and slice into rounds.
  2. Soak in salted water for 15 minutes.
  3. Finely chop the onion, add olive oil and fry it. Add the minced meat and continue frying.
  4. Add tomato sauce, cumin, salt and pepper and continue frying. Take the cooked ground beef off the stove. Add the chopped parsley and mix.
  5. Dry the eggplants and fry them in hot oil. Place the cooked eggplants on the baking tray.
  6. Spread the minced meat on top. Garnish with peppers and cherry tomatoes.
  7. Mix the ingredients for the sauce, add to the baking tray. Bake in the oven at 190 degrees for about 10-15 minutes and serve.
