For some reason I'm not in a good mood today, I think I got the feeling of tiredness and restlessness after heavy periods. When the pessimism in the air supported this situation, I started kitchen tours to relieve myself again.

Pasta, and especially pasta with vegetables, is an incredible source of happiness for me, for some unknown reason, some people feel happy when they eat chocolate and some like me when they eat pasta.

If you are bored today, you can't decide what to do when you get home in the evening and you say, "Oh, I'll order, you can't deal with it." I say spend some time in the kitchen. Flavor your own pasta according to your taste. It doesn't necessarily have to be parmesan, if you can add any kind of cheese or herbs, enjoy the pasta you make with your hands. If you say that only pasta will not save this situation, you can support it with 1 glass of red wine :)

Ingredients for Vegetable Pasta Recipe

For the pasta:

  • Half a pack of pasta
  • 1,5 liters of water
  • salt
  • 1 tablespoons of oil

For the vegetable sauce:

  • 1 medium zucchini
  • 1 medium eggplants
  • 1 bell peppers
  • 1 piece of charliston pepper
  • 1 sweet red pepper
  • 2 cloves of garlic
  • salt
  • 6 tablespoons of oil

For the above:

  • 1 teaspoon grated Parmesan cheese
  • 1 teaspoon basil

Fabrication:

  1. Boil water for pasta, add salt and oil and boil for 10 minutes. Drain the cooked pasta and set aside.
  2. Wash the zucchini and eggplant, cut them into 2 parts without peeling, and cut them lengthwise into 2 cm widths. Cut the peppers lengthwise into two parts, remove the seeds and chop them lengthwise. (all pieces will be 1 inch long)
  3. Peel the garlic, finely chop. Take the oil in the pan, add the garlic and sauté for 1 minute.
  4. Take the peppers in the pan, sauté for 2-3 minutes and transfer them to a plate. Add 1-2 more tablespoons of oil to the remaining oil in the pan and put the eggplants in the pan.
  5. Add the zucchini when the eggplants begin to turn brown.
  6. Add the peppers and salt you have set aside to the vegetables you have cooked for 5 minutes and sauté for another minute.
  7. Add the cooked pasta to the pan and mix.
  8. Add parmesan and basil to the pasta you take on the serving plate and serve.

    When you add the Parmesan without removing the pasta from the pan, it melts and becomes very delicious.
