Eggplant Pasta
In fact, this delicious recipe was one of the pasta dishes I had at home, which I prepared in the first years when I started to write Kitchen Secrets. When I say long working hours, 2 hours away from home and work, I thought that you deserve much better than a clumsy photograph and a written recipe. That's why I fixed it again and presented it to your liking :)

Ingredients for Eggplant Pasta Recipe
- 2 medium eggplants
- 1 pack of pasta
- 4-5 tablespoons of olive oil
- 1 cup of grated cheddar cheese
- 2 cups of tomato puree
- 1 medium onion
- 2 cloves of garlic
- 2 red sweet peppers (1 yellow and 1 red pepper upon request)
- salt, pepper
How to Make Eggplant Pasta Recipe?
- Peel and dice the eggplants. Fry it in oil and transfer it to a pan covered with a napkin to absorb excess oil.
- Grate the tomatoes. Chop the onion and garlic.
- Remove the seeds from the peppers and finely chop them.
- Saute the onion, pepper and garlic in olive oil for 2 minutes. Add the grated tomato on it and cook on medium heat for 4-5 minutes. Flavor with salt and pepper without removing from the stove.
- Drain the pasta you boiled in salted water. Pour the sauce over the pasta and mix.
- Take the pasta on a serving plate. Serve by adding fried eggplants and grated cheddar cheese on it.
