Ingredients for Eggplant Pasta Recipe

  • 2 medium eggplants
  • 1 pack of pasta
  • 4-5 tablespoons of olive oil
  • 1 cup of grated cheddar cheese
  • 2 cups of tomato puree
  • 1 medium onion
  • 2 cloves of garlic
  • 2 red sweet peppers (1 yellow and 1 red pepper upon request)
  • salt, pepper

How to Make Eggplant Pasta Recipe?

  1. Peel and dice the eggplants. Fry it in oil and transfer it to a pan covered with a napkin to absorb excess oil.
  2. Grate the tomatoes. Chop the onion and garlic.
  3. Remove the seeds from the peppers and finely chop them.
  4. Saute the onion, pepper and garlic in olive oil for 2 minutes. Add the grated tomato on it and cook on medium heat for 4-5 minutes. Flavor with salt and pepper without removing from the stove.
  5. Drain the pasta you boiled in salted water. Pour the sauce over the pasta and mix.
  6. Take the pasta on a serving plate. Serve by adding fried eggplants and grated cheddar cheese on it.
