Knitted Donut
Hello dear friends,
I think it triggers the urge to knead the dough as soon as I open my eyes while the snow is driving at full speed (don't think that people have such urges, you'll see if it happens to you) :) I've started going to the kitchen again for 2 days as soon as I wake up. Half-drowsy, I find my hand in the dough, saying, uh, get this or that.
I've been chasing a puffy dough for a long time. Finally, today I have reached a taste exactly as I wanted. This dough is great, but you may find it a little difficult to stick. That's why I love the other name, I put a donut in trouble :) You need to knead the dough with your mixer, not with your hands (who use kitchen aid can use the hook tip, and those who use a hand mixer can use the spiral tip). You should leave it to ferment a little more than usual. Especially in these weather, it is much better if you leaven in an oven set to 40 degrees.
Our dough is not hard, in fact, it looks more like the bread dough we bought from the oven, waiting in the bag and swollen, the only difference is that it contains oil. Do not be afraid when I say oil, it contains only 1 tablespoon of butter to give it oil and aroma.
I've been making knitted pastries from puff pastry for years. It's much easier to fold the puff pastry, but once your hands get used to it, you can have your pastries ready to be placed in the oven in no more than 10 minutes.

Note: There is no egg in the dough, we only use 1 egg yolk for the top.
Ingredients for Knitted Pastry Recipe
- 4,5 water glass flour
- 1 spoonful butter
- 1 tablespoon of dry yeast
- 1 cup of warm milk
- 1 fingers missing oil from 2 glass of water
- half a glass of water
- 1 sweet spice salt
- 1 egg yolk for topping
For inside:
Feta cheese and parsley mix
Fabrication:
- Take the flour in a mixing bowl and make a hole in the middle with your hand.
- Pour milk, water, yeast, salt and oil into the middle of the dough and mix with a wooden spoon.
- Take the dough into the mixer bowl when all the flour is mixed by holding the dough spoon (hand mixer users can mix in the same bowl)
- Put the hook of the mixer on the hook and knead the dough for 4-5 minutes (when the dough sticks to the hook and comes together completely, cover it with a stretch and leave it for 40 hour in the oven at 1 degrees.
- Gently knead the fermented dough in its bowl and break off 10 pieces the size of an orange and roll them out.
- Open each piece as in the photo and make 7-8 cuts from the right and left as in the photo.
- Cover each piece of dough with the right and left overlapping, by spreading the cheese mortar you prepared in the middle.
- When all the braids are finished, put them on the baking tray and brush with the egg yolk that you opened with 1 tablespoon of oil.
- Bake in a preheated oven at 180 degrees for 20-25 minutes, until the top and bottom are browned.

If there is no dough mixer, can we knead by hand? I bought the ingredients to try today and I guess it was because there was no mixer…
You can knead it, but your hand temperature will affect the dough. Try not to go beyond the flour measure.
